Seared Serrano and Jalapeno Corn Salsa

If you would like try some new favor, it's maybe a good choice. This is not necessarily your traditional salsa, and it works great as both a salsa or a side dish. We tried this with our grilled Yellowfin Tuna recipe . Adding some chili peppers if you like, much more Delicious!


  • 4 ears of corn, shaved
  • 2 jalapeno peppers, diced
  • 4 Seranno peppers, diced
  • 3 generous sprigs fresh parsley, stems removed, chopped
  • 2 tablespoons fresh scallions, chopped
  • 2 teaspoons olive oil


  1. In a mixing bowl, combine all ingredients and mix well
  2. Sauté in a pan over medium heat about 5 minutes with olive oil ensuring corn remains nice and crisp
  3. Serve over your favorite fish or chicken
